A vendor tray is carried out in front of the person handing out your product, so it is in view the whole time it is being used. Painting one in your brand colour makes it read as part of the uniform rather than a borrowed prop.
This is a finishing option applied to the vendor and sampling trays, not a tray on its own. Choose the tray you want first, then add the painting to it.
